225g self raising flour
55ml olive oil (can also use coconut oil etc.)
Filling and flavours of your choice - for the muffins pictured, I used 1 grated carrot, 1 grated courgette and 95g of grated cheddar cheese. (I should add, that if you are doing a savoury filling, then add a good amount of ground black pepper. It really finishes it off!)
Pre heat the oven to 180 degrees (fan assisted)
Mix all the dry ingredients in a large bowl (flour, cheese, grated vegetables)
Add the oil, milk and egg. Mix everything together.
Grease the holes in a muffin tray.
Evenly dollop the mixture into the muffin holes.
Bake in the oven for 20-25 minutes (I usually do 22 minutes, to be precise).
Leave to cool in the tray, before transferring to a cooling rack.
